Gastón Ares is Associate Professor at the Universidad de la República (Uruguay) where he leads an interdisciplinary research group specializing in eating behavior and food policies. He has extensive experience in research and teaching in sensory and consumer science. His work currently focuses on consumer behavior, food environments and policies to promote healthier and more sustainable eating patterns. He has authored over 420 articles in international peer-reviewed journals, contributed to multiple book chapters, and delivered numerous presentations at scientific conferences. Gastón serves as co-Editor-in-chief of Cleaner Food Systems and Associate Editor of Appetite. He has provided expert consultancy for UNICEF and the Pan American Health Organization and was a member of the Nutrition Guidance Expert Advisory Group (NUGAG) Subgroup on Policy Actions of the World Health Organization.
