Paula Varela

Professor Paula Varela is Senior Researcher at Nofima and Professor at the Norwegian University of Life Sciences. She holds a degree in Food Engineering from Universidad de la República (Uruguay) and a PhD in Food Science from Universidad Politécnica de Valencia (Spain). With over 190 peer-reviewed publications (h-index 49), six co-authored books, and numerous conference presentations, she is ranked among the top 2% most cited researchers in Food Science (Stanford University).

She received the 2024 Established Researcher Award from the European Sensory Science Society (E3S) and serves as Associate Editor of Food Quality and Preference. Paula is Vice-Chair of E3S, former Chair, and initiated the Sensory Science Global Group (SSGG), a collaboration among global sensory science societies. She acts as scientific advisor to various EU initiatives (JPI-HDHL, ETP Food for Life), EU projects and research institutions. Her research explores how Sensory and Consumer Sciences can support healthier and more sustainable food behaviours.
